This should actually be called Yes-Yes Banana Cake as you can eat as much of it as you like totally guilt free!
I’ll be honest, the idea of a fat-free sugar-free banana cake sounded a bit grim before I tried it, but I’m on a diet at the moment and frankly, I got a bit desperate for a piece of cake. This cake has no fat in it, and is sweetened by a mixture of the bananas, honey and (unsweetened) apple sauce and it tastes fantastic. You *really* wouldn’t guess how healthy it is by tasting it! It’s moist and moreish and I totally wouldn’t go back to my regular ‘butter and sugar’ recipe!
All the recipes for banana bread using apple sauce were using cups rather than grams so I had to make my own recipe up. I’ve put both options here, hope it’s helpful!
Ingredients:
- 3 bananas
- 2 cups (350g) of self raising flour
- 1/2 cup (110g) sugar free apple sauce
- 3/4 cup (170g) honey
- 2 eggs
- 150g raisins or sultanas
- 100g chopped apricots or chopped dates
- 1/2 bicarbonate of soda or baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Mash your bananas (I found that a potato masher is the best tool for the job) and mix in the sultanas, dates, apple sauce and honey. Stir in the beaten eggs followed by the flour and mix gently until combined.
Pour the mixture into a lined or oiled loaf tin and sprinkle with oats or demerara sugar* (optional)
Bake in the oven at 350 degrees F / 175 degrees C for about an hour.
Leave to cool in the tin for 10 minutes before turning out onto a wire rack. Once the banana bread is completely cold slice and enjoy!
*having some crunchy sugar on top is very very nice, but then it isn’t strictly a ‘no-sugar’ cake I guess…
This looks yummy. I often have bananas which go riper than I like so it’s great to have a healthy recipe to use them.
I’d love to know what you think of the recipe, pls let me know what you think! 🙂
I made this yesterday, and to be honest it was way too sweet for me. Between the natural sweetness from the 3 bananas, 1/2 cup applesauce, raisins and dates, and then on top of that adding the 3/4 cup honey there just seems to be too much going on. I rarely find myself thinking that I wish there were less add-ins and more bread, but if I were to re-make this recipe I would cut all the add-ins (at the very least) in half. I would also cut the honey down to 1/4 cup. This is supposed to be guilt free but natural sugar is still sugar and there’s just too much of it in this recipe for it to be called healthy.
