There really couldn’t be a simpler recipe than this, and the beauty of this cake is not only that its packed with fruit, it also has not butter or oil in the recipe (unless you slather it with butter when you eat it of course!).
The only thing to remember is to plan ahead, as the fruit ideally needs soaking overnight in the tea before you make your cake. Having said that a few hours soaking will work almost as well.
Ingredients
- 250g dried mixed fruit
- 250g self raising flour
- 125g caster sugar
- 1 egg
- 1 cup of cold black tea
Place your fruit in a bowl and cover with the cold tea. Leave for 2-3 hours or preferably overnight until the fruit is swollen.
Heat the oven to 170c.
Mix the ingredients together and pour into a lined loaf tin. Don’t drain the fruit, add any remaining tea to the mixture too.
Bake for 1 hour.
