I’ve seen these everywhere on the internet and couldn’t resist trying them. These aren’t so much my typical baking sweet treat as a real weekend brunch special. Bacon and eggs but in a cute cupcake package. What’s not to love?
I didn’t use any particualar recipe, I just made it up as I went along. If you have any different varietions on this recipe I’d love to hear!
Ingredients:
- 6 rashers of bacon
- 6 medium eggs
- 3 slices of bread
- butter
Makes 6
Preheat the oven to 180 degrees C and while you’re waiting for it to heat up gently fry your bacon. You don’t want the bacon crispy (at this stage) just cooked but still soft. Cut 6 circles of bread with a small glass or cookie cutter.
Butter your cupcake pan generously (or they stick like crazy!) then fit your bacon around the sides of tin and push your circle of bread into the centre. Press down to form a kind of bacon and bread cupcake case. Crack an egg nto the middle of each and pop into the oven for 10 minutes (for a soft egg) and 15 minutes for a hard egg.
